Scratch #488 continues the trajectory of our previous Weizenbock adventures. Starting with a base of floor-malted pilsner and Vienna malts, we also add white wheat for a creamy texture. Using decoction and a traditional step mash intensifies the bready maltiness and sets up the yeast for great things. German Northern Brewer hops balance with a woody undercurrent before our German hefeweizen yeast ties it all together, lending flavors of candied clove and subtle black pepper. Think of this beer as DreamWeaver’s maltier big brother!
