Scratch #357, a beer dreamed up by brewers at Tröegs and cheesemongers at Di Bruno Bros., is a fruity, rustic and hazy IPA designed to pair with Di Bruno’s Select Cabot Clothbound Cheddar. Local rustic malt, chit malt and malted oats make for a hazy and soft body, while fermenting hot with Norwegian Voss Kveik yeast lays a frothy orange canvas. The combination of Experimental No. 06297, Mosaic and Simcoe – primarily added after fermentation – adds layers of mango, apricot and a hint of coconut.
