The malt bill of Scratch #354 was designed to soften the texture of the beer and coax out hints of honeycomb, flaky biscuits and toasted grains while eliminating any caramel sweetness. We got there with a backbone of local pale malt combined with honey malt, oats, and wheat. Pushing most of the hopping to the cold side, we added Azacca for a big citrus profile and Citra and Comet for fruity grapefruit, pear and honeysuckle notes.
