Our Scratch brewing team’s goal with today’s three releases was to brew beers that are soft in body and bitterness, allowing us to load up on clean, clear hop flavors and aromas. The malt composition of these beers is similar, with a backbone of Rustic Pale from right here in central Pennsylvania. The big difference comes in the flavors and aromas the dry-hop combinations are producing. Scratch #340, double dry-hopped with Cascade, Chinook and Comet, has hints of jasmine, apple blossom and red berries, with a touch of citrus to punch up the floral and berry notes. For the geeks out there, watch for next steps using different yeasts and grains to push the body and the fruitiness.
