The art and science of brewing collide with our latest House Hazy IPA! Starting with a complex grain bill, it’s the addition of chit malt – an under-modified barley – that adds protein, improves head retention, and bolsters the haze factor of this beer. Hop-wise, we removed kettle additions altogether in lieu of adding Centennial to the mash, which yielded bright citrus flavors and low bitterness. Dry-hopping with Cryo Citra and Simcoe – and harnessing thiols, the highly aromatic essential oils of these hops – churns out juicy notes of overripe grapefruit and passionfruit with a slightly sweet finish.
