With Scratch #535, we’re revisiting a traditional German style known as Gose. Highlighting the floral and sweet-citrus character of the spice coriander, this zesty beer is punctuated with a complex lemon-like tang thanks to the first step of the fermentation process. Before the boil, we introduce lactobacillus – a sour yogurt culture – to lend a clean acidity to the beer’s finish.
