Cold Session IPA? Yes, and it’s perfect at the start of summer! Scratch #462 begins with a simple base of BEST Pilsen malt, flaked rice and Hallertau Tradition hops. But here’s where it gets interesting. By adding fresh wort toward the end of fermentation through a process called Krausening, we’re learning how the yeast bio-transforms the dry hops. We used two Southern Hemisphere hops – Galaxy and Nelson Sauvin – to coax juicy aromas of peach and citrus rind. Our house lager yeast pulls everything together by lending a crisp, clean citrusy finish to this quaffable light-bodied beer.
