With Scratch #559, we’re revisiting a traditional German style known as Gose. Highlighting the sweet-tart flavor of plump blueberries, this zesty beer delivers a delicious mouth-puckering blast of joy. Before the boil, we introduce Lactobacillus – a sour yogurt culture – to lend a clean acidity to the beer’s finish. A second pass in our open fermenter produces soft, fruity esters. The additions of orange peel and pink Himalayan salt amplify the blueberry-jam character of this refreshing summer beer.
